For the sponge cake

150 g Flour

150g Self raising or 
150g Plain Flour + 2 tsp  baking powder or 
150g Gluten Free Self Raising Flour + 1 tsp xanthan gum or 
150 g Gluten Free Plain flour + 1 tsp xanthan gum 150g + 2 tsp  baking powder or
150g Plain Flour + 2 tsp  baking powder or
75g cornflour

150g Sugar

Can be Granulated, Caster, Brown or Coconut (the latter two colour the batter caramel) or Coconut. Do not use Icing sugar

3 Eggs

1.5 g mashed ripe banana or 12 table spoons buttermilk or 9 tablespoons yoghurt

150g Butter

Goats Butter or coconut oil or Dairy free butter or vegetable oil or sunflower oil

Flavouring agent

1 tsp Extracts or zest of 1 citrus fruit 

For buttercream (use these substitutes only for good results):

1x 250g Butter (or coconut oil or goats butter)

1 x 500g pack of icing sugar


Electric hand whisk or a spatula or a regular whisk

Piping bag*

Piping nozzle*
